ALMOND CAKE
[ Recipe: Simone, San Francisco ]
I created this cake after making the exact same recipe with flour. I
substituted last year, with potatoe starch and it was great. Enjoy.
Ingredients:
2 eggs
1cup oil (or melted butter)
1 cup orange juice (or apple juice)
2 cups almond flour (you make it yourself if you dont find it already
finely ground. If you do it, use unskinned almonds)
1 cup sugar
2 cups potatoe starch
1 tablespoon vanilla flavor
Turn on your oven 325 F (160C)
In big bowl mix egg yolks with sugar. Add vanilla, oil and apple juice until well blended. Add almond flour, potatoe starch. At the end add the two egg whites that you have beaten until fluffy. Mix delicately. Put in oiled pan.
Put in oven for 50 min. app. You can serve that cake with raspeberry sauce or with some fresh apple or apricot compote (I make my compote with fruit, some liquor and some sugar). Enjoy.
