MOTHER DINA'S EGGPLANT SALAD
[ Recipe: Zvika, Affula, Israel ]
Ingredients:
1 large eggplant
1 medium onion
3 hard boiled eggs
oil for frying
salt and pepper to taste
Peel eggplant and chop into small cubes. Squeeze out all the water from the eggplant. Fry the eggplant in oil and then drain on paper towels. Place eggplant in large bowl, add 3 hard boiled eggs cut up into cubes. Add 1 finely chopped onion. Mix/Mash all the ingredients together. Add salt and pepper to taste. Refrigerate to cool off and enjoy.
