DELICIOUS, EASY PAREVE & NON-GEBROCHT
POTATO SOUP
[ Recipe from Judy, Brooklyn ]
Chop 1 large onion & saute in a small amount of light oil until transparent, but not brown.
Add as many potatoes (cut in small cubes, as for potato salad) as desired (depending on quantity of soup you want).
Add water to cover potatoes, plus one cup. Simmer until potoes are tender (about 15 minutes).
Add salt & pepper to taste.
