TUNISIAN VEGETABLE AND BEEF STEW
[ Recipe: Joseph, San Francisco ]
2 lbs spinach cut in small pieces, 2 turnips
1 small bunch of parsley, chopped
3 carotts cut in small pieces
1/2 pound fava bean (preferably fresh)
1 fennel bulb cut in pieces
1 leek cut in slices
3 to 4 fresh onions or 1 bunch of spring onions cut in small pieces.
Put every vegetable cut in small pieces (bite sizes), in a pot. Add 1/2 cup olive oil 2 pounds of beef (for stew) cut in small pieces, 1/4 tablespoon cinamon, 1/8 tablespoon pepper, 1 tablespoon dried mint, 1/2 tablespoon red pepper (not hot) 1 full head of garlic, crushed, 1/2 bunch of chopped coriander, 1/2 bunch of fresh dill. Let simmer for a couple of hours.
Before serving, you can add pieces of matsa that will become soft.
