MATZA PIZZA
[ Recipe from Van, Jerusalem ]
1 Jar of Kosher for Passover Tomato Sauce
1 Package of grated Kosher for Passover cheese
1 Box of matzos
Salt to taste
Matza Pizza is a family favorite. Simply spread tomato sauce on matza. Sprinkle grated cheese on top. Garnish with any topping you like (note: remember that corn is usable only for Jews from Eastern communities during Passover). We like mushrooms and peppers.
After the matzo slice is prepared, place in toaster over. Make sure that the toaster oven was not used for toasting bread throughout the year. Otherwise it could be problematic for use during Passover. Consult your local rabbi if you have questions.
Because the matza is already so dry and brittle, bake on "top brown only" - otherwise the matza pizza will be pretty inedible. After cheese begins to bubble, remove from toaster over. Let cheese cool for about one minute. Enjoy.
Budget two matza squares per adult for a meal. This recipe is "gebrochts" is not considered acceptable to certain hassidish/yeshivish adherents.
