| The Volpe Pasini

The
wine cellars of Volpe Pasini in Togliano, a picturesque village
in the eastern hills of Friuli, are only 15 km east of Udine and
five kilometers from the Slovenian border.
Since
the 17th century, historical documents produced by the Volpes -
a family of Friulian farmers - and the Pasinis - wealthy Venetian
merchants who owned large estates in the "Serenissima" - reveal
the region's close link to grape growing and wine production.
Today,
Dr. Emilio Rotolo, who has successfully turned the cellars into
a world-renowned facility. The ultra-modern winery produces 180,000
bottles a year from grapes grown and manually harvested on the 85
acres of land surrounding this beautiful property. The 400-year-old
establishment also houses, guest rooms and a conference hall.

The
cellar's wines will be certified kosher as of next year, Dr. Rotolo
said, looking forward to becoming the first high quality wine producer
from this region with such certification.
Most
of the grapes grown here are for white wine, one of which, the Pinot
Bianco of the Zuc di Volpe 1999 line, received the Three Bicchieri
honor. Six other wines from Rotolo's cellars received the Two Bicchieri
honor from Gambero
Rosso, the Italian Wine and Food magazine.
The
Zuc di Volpe line is the pride of Volpe Pasini production. Only
the best grapes are selected and the resulting wines are a seductive
and stunning expression of the Volpe Pasini tradition.

The
Pinot Bianco has a light straw color with green highlights. The
aroma is delicate, almost ethereal, and will remind you of small
berries or delicate flowers. Very harmonious and possessing good
character, this wine exhibits much elegance and finesse and the
flavors are gentle and supple. The wine will marry well with most
appetizers as well as with risotti and soups. It also accompanies
poultry and fresh soft cheese.
Seventy
five percent of the Volpe Pasini wine production is exported abroad,
mainly to USA and Germany.
